Come join Master Food Preservers (and Bakers Dozen members) Jamie Kubota and Sarah Sweedler for an online zoom class where we’ll walk through the best ways to preserve summer’s bounty, with a focus on peaches.
We’ll cover water bath and steam canning processes that can be applied to most any fruit, briefly introduce how pH affects canning safety, and talk through thickening options like Clear Gel, fruit pectins, and low-sugar thickeners.
We’ll provide research-tested recipes for peach pie fillings, low-sugar peach jam, and peach kolaches alongside tips on how to freeze the peach pie ingredients to make these recipes in the dead of winter when peaches provide much-need sunshine.

About our Speakers:
Jamie Kubota is a Chef/RD/Instructor in the Nutrition Department at San Jose State University where she teaches culinary-focused classes to nutrition students and the campus community. A Baker's Dozen member and new graduate of the UC Master Food Preserver Program, she's excited to bring together the worlds of baking and preserving.
Sarah Sweedler recently retired from running an international non-profit and now spends her days baking and preserving. She's a Bakers Dozen member and a recent Master Food Preserver graduate.
